Quick + Easy Meal with Simon Toohey 

 

Tofu Noodles with Fried Shallot Sauce with Simon Toohey

Serves 2
Prep time: Quick! 
Cooking time: Even quicker! 

INGREDIENTS

  • 1 packet of ramen, 2-minute, or noodles of choice
  • 200g semi firm tofu
  • 3 tablespoon soy sauce
  • Any other condiments you would like

SHALLOT SAUCE

  • 2 onions (or 4 shaloots if you can find them)
  • 3 cloves garlic
  • 1 red chilli
  • 1 carrot
  • 3/4 cup grape seed oil

METHOD

1. Place everything into a blender until finely chopped. Place into a heat proof bowl. 

2.Heat the oil in a saucepan. When it is smoking, pour over the blended onion mixture and let cool. 

3. Boil the tofu until softened. In the same pot, add the noodles until cooked. Drain and place in a bowl. 

4. Add the shallot sauce, soy and anything else you would like to add. 

5. EAT!!
